Roasted Garlic
To roast garlic, first remove the papery outer skin from the garlic heads, leaving the clusters of cloves intact. Cut a large slice off tip end of garlic, exposing some of the garlic in each clove. Place the garlic in the center of a sheet of aluminum foil. Dot each head with 1/2 teaspoon butter; sprinkle with salt and pepper. Wrap foil around garlic and seal. Roast at 350 degrees F for 1 hour, until garlic heads are golden brown and tender.
To use, simply squeeze the garlic out of the browned husk. Store refrigerated.
